Bikini

Makes enough for 10 guests

For the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Cocktail (yields 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Method

Making the Cordial: Combine all the ingredients inside a pot, bring to a simmer, mixing to dissolve. After that, remove from the heat allowing it to cool completely. Pour into a clean bottle, close it and store chilled, it can be stored for up to one month.

To make Premix: Combine all the liquids into one sizeable container, leave to sit for 60 minutes, then strain , ideally through cheesecloth, so it's fully clarified.

When ready to serve: Pour 85ml of the batch mix into a cocktail shaker filled with ice, gently stirring carefully for a minute until cold. Pour to a chilled martini glass or equivalent, decorate with the cranberries and complete it using a light spray of the essential oil above the glass.
